Plant Based, One Pan Chicken and Green Lentil Casserole


Since most of us are staying around the house and doing our own cooking due to the recent pandemic, a simple, healthy meal that uses minimal dishes is a welcome addition to a menu. You don't have to be a rockstar in the kitchen to make great tasting dishes for you or your family. This dish is no exception. With some basic ingredients that are inexpensive and easy to find in your local grocery store, you can have this meal on your table in about an hour.


This dish uses lentils which are one of the most nutritious foods for the money you can buy. Personally, I look for recipes that use them. Not only are they high in fiber but are packed with protein and vitamins and should be a staple in your pantry if you're following a plant-based diet. I have pointed this out before but I'll say it again. A plant-based diet does not necessarily mean a vegan diet. It can, however, mean that one is trying to include more plant foods in their diet. These include beans, lentils, nuts, seeds, whole grains, fruits, and vegetables. This is the healthiest way to eat when you're looking at sustainability of a "diet". You don't deprive yourself of carbs, you're getting high amounts of fiber and you're including many fruits and vegetables for high amounts of vitamins and health-promoting minerals.


INGREDIENTS


4 chicken thighs (skin removed)

1 tablespoon olive oil

1/4 onion, sliced

1 stalk celery, chopped

1 carrot, shredded

14 oz. diced tomatoes

1 cup low sodium chicken broth

7 tablespoons green lentils, rinsed

1/2 teaspoon garlic powder

1 pinch salt

1 dash pepper


DIRECTIONS


1. preheat oven to 350 degrees F

2.Season chicken with garlic powder, salt and pepper

3.Set aside to marinate

4. In a skillet, heat olive oil over medium heat

5. Add onion, carrot and celery and saute 2-3 minutes

6. Transfer vegetables into baking dish

7. Add diced tomatoes, chicken broth, lentils and garlic powder

8. Season with salt and pepper and mix to combine

9. Place the chicken on top of mixture and press slightly so they're covered

10. Put baking dish in the oven and cook for about an hour, or until chicken is cooked through
