One of the best ways to eat healthfully is to make and take food with you as you work or go to school. If you stay at home, having food that is readily available during the midday can help to make sure you’re getting the recommended protein, carbs, fat and fruits and vegetables.
It’s for these reasons that I have this recipe as a regular in my meal prep rotation. I’m in my forties, so I know that I need to make sure I’m getting my recommended daily amount of protein for a woman (46 grams for adult women and 56 grams for adult men). The chicken and the Greek yogurt pack a powerful protein punch. The apples and pecans provide the crunch that makes this salad satisfying for your brunch or lunch meal!
4 halves chicken breast
1 1/2 large Gala apples, chopped
1/3 cup celery, chopped
1/4-1/2 cup Pecans, chopped
6.5 ounces plain Greek yogurt
3 tablespoons lite mayonnaise
2 tablespoons lemon juice
1 1/2 teaspoons Dijon mustard
1/4 cup chopped, fresh parsley
salt and pepper
1. Preheat oven to 350 degrees. Cook chicken in a baking dish with olive oil drizzled on top and salt and pepper to taste for 30 minutes or until fully cooked.
2. Chop parsley, celery, apples, and pecans.
3. Mix yogurt, mayonnaise, lemon juice, and mustard until combined.
4. Dice cooled chicken and add all ingredients until well coated.
Serve separately or on whole grain buns.
